Cheese made from yoghurt
Place the towel in a pot of clean boiling water before you begin to make sure the towel is clean and free from any detergent. Tip the yoghurt onto the towel. Gather up the edges of the cloth and fasten them with a sturdy rubber band. Attach the towel with the yogurt in it to a tap/faucet over a sink where it can drip for several hours or overnight. After draining, remove the towel and put the ball of cheese into a bowl. Eat immediately or chill.
This is quick to prepare but takes many hours to drip/preferably overnight over a sink.
