Leek, Potato and Pea Soup

Description

Hearty winter soup

Ingredients

  • 1 c water
  • 1 leek, cut in thin rounds
  • 2 clv garlic, mashed
  • 3 potatoes, cut small
  • 1 T flour
  • 1 c frozen peas
  • 2 tbsp butter

Instructions

Let the child/ren wash all vegetables and cut up them up with plastic knife. Put the leek, garlic and potato in the rice cooker with enough water to cover it and press “cook”. When it signals it is finished test a piece of potato to see if it is done. If not, Press “cook” again While waiting put 2 Tablespoons of butter in a cup and microwave 20 seconds. Add the flour and stir. Add ½ cup hot water and stir until it is smooth. Microwave 20 seconds. When the potatoes are done, add the peas and the butter/flour mixture and press “cook” again. Add salt (optional) and more butter before eating

Notes

This soup will cook quicker if the vegetables are cut in small chunks. If the children are young and cannot make small chunks, it may be worth mashing the large pieces when they are partially cooked to speed up the process. Do not let the child/ren mash hot liquid as the steam will burn them.
