Hearty and naturally sweet soup
Put the onion in a mug with a little water and cover with a saucer. Microwave on high for 3 minutes. Put the pumpkin pieces on a microwave safe dish or tray and cover with another one the same size. Microwave for 2 minutes. If the pieces are not tender, microwave for another two minutes. Continue until tender. Put the onion, pumpkin and the sweet potato pieces into a rice cooker. Mash the vegetables down a bit and just cover with water. Press “cook” When finished check to see the sweet potato is done. If not, press “cook” again. When everything is done, mash the vegetables together well with 2 Tablespoons of butter and add a little salt. Pour the cream on top and stir.
The pumpkin will have to be peeled and cut by an adult as pumpkin is beyond the capacity of a plastic knife. Let the child/ren chop the sweet potato into small pieces whilst you are doing the pumpkin.
You may wish to puree this soup before serving it.
